Spinach Mushroom Orzo

Ingredients
- 1 Cup Orzo
- 1/2 Cup White Wine Pinot Grigio or Chardonnay
- 1 Yellow Onion Small
- 3 Cloves Garlic Minced, Measure with your heart
- 1 Cup Mushrooms Chopped into medium pieces
- 3 Tbsp Butter
- 2 Tbsp Olive Oil
- 2 Cups Chicken Broth Bone broth for extra protein
- 3 Cups Spinach Chopped
- Grated Parmesan Cheese Optional
- Italian Seasoning
- Salt
- Black Pepper
Instructions
- Heat a high-wall pan over medium heat. Add 1 tbsp of butter and your olive oil. Melt butter and stir with the oil.
- Add mushrooms and onions. Cook until onions are transparent.
- Add garlic to the pan and cook for 30-60 seconds.
- Add white wine and Italian Seasoning. Cook over medium-high heat for 3-4 minutes until wine is reduced.
- Add orzo and stir everything together.
- Add 1 1/2 cups of chicken broth. Make sure everything is mostly covered.
- Cover pan and cook orzo for 10 minutes.
- Stir contents of the pan. Add the last of the chicken broth and the spinach. Stir to mix in the spinach.
- Cook for another 5 minutes or until the orzo is cooked completely and the spinach is soft/wilted.
- Serve as is or top with some parmesan cheese. Add salt and pepper to taste.
