Heat a high-wall pan over medium heat. Add 1 tbsp of butter and your olive oil. Melt butter and stir with the oil.
Add mushrooms and onions. Cook until onions are transparent.
Add garlic to the pan and cook for 30-60 seconds.
Add white wine and Italian Seasoning. Cook over medium-high heat for 3-4 minutes until wine is reduced.
Add orzo and stir everything together.
Add 1 1/2 cups of chicken broth. Make sure everything is mostly covered.
Cover pan and cook orzo for 10 minutes.
Stir contents of the pan. Add the last of the chicken broth and the spinach. Stir to mix in the spinach.
Cook for another 5 minutes or until the orzo is cooked completely and the spinach is soft/wilted.
Serve as is or top with some parmesan cheese. Add salt and pepper to taste.
